San Francisco Airport Fairfield Hotel

We were up at 5:30 am and took the hotel shuttle to the airport with a driver who was a tall, good looking black man.  He had a very deep resonant voice and, in-between making his announcements, he sang along with some classic Barry White type songs.  Nice way to make an otherwise mundane activity into something interesting.

The SFO airport was a ghost town, check-in went smoothly since I am lifetime Platinum so we get to use the First Class check-in even when we travel coach. But, let’s not talk about this because Margaret likes to travel Business Class and I just couldn’t get my head around paying about $8,000 more for this trip and upgrades just don’t happen in 2015 regardless of your status. One interesting milestone that will happen on this trip is Margaret will become lifetime Platinum on American with our return trip. That means that she will eclipse 2 million miles on American. I probably have 3 million on American and well over 5 million on all carriers. Hard to believe that we put our bodies through that grief but we did.

We boarded our flight to Charlotte on-time after getting our latte’s.  The plane was an American-USAir A310 and we had aisle seats sort of across from each other for the 4+ hour flight.  We ate what we could of the standard airplane food…gluten free or not and I read Dana Perino’s new book and Margaret played her 3’s game on her iPad mini.

Upon arrival in Charlotte we had a long-ish walk from B Terminal to D Terminal later and, with the limited time we had we bought a bunch (meaning probably too much) of s0-so sushi near our gate and boarded our flight to Barcelona on-time. Another former USAir plane, this time a wide-body A320. This time we sat side-by-side on the 2 seat side in coach.  The flight was only about 80% full but we decided to forego taking an entire center row that we could lay down and sleep on. Margaret’s not too big on that but I used to spend what seems like half my life taking red-eyes back East doing that, complete with minor league hockey teams once in a while.  Margaret had purchased two foam neck pillows just before boarding (two for the price of one of course) so she figured we could just sleep in our coach seats.  I had purple, she had black and white leopard style.  Very stylish!  But a pain in the butt carrying them around the airport.

After boarding they had a problem with the APU (Auxiliary Power Unit) and had to move fuel around to different tanks for weight balancing so we ending up leaving an hour late. While we both took ½ an ambien so we would sleep it didn’t do much for either of us. When we ended up landing on time in Barcelona after a 9 hour flight both had about 2 hours of sleep but I finished my book and we had both watched a couple movies. We had red eyes but it was our own fault.

Along the way we got very familiar with a woman who had (probably inappropriately) dressed in a tennis outfit of sorts.  She kept forgetting something that she had put in the center overhead compartment so about 5 times she climbed on a guy’s seat and pulled out something.  I got a picture of it about halfway through her exploits.  Pretty crazy.

Carmel, CA

I’ll apologize up-front for some of the boring bits of the blog posts to follow. You really should just skip this post and go to the next one. Too much detail I know but, after all, it’s really for us to remember our travels and what we were doing back in the day when we get old so as you read through this blog you might just scan quickly for the truly interesting bits (if any) and ignore the rest. It’s amazing how quickly your forget events on trips like this where much of it is similar.

With our move from our big Reno house going on for the last 6 weeks, every day lately has been very busy with barely a moment to just sit down and relax. Today was no different. Our plan was to leave for the San Francisco airport (SFO) at 4:30 pm, arrive at the Fairfield hotel right outside the airport at 6:30 and have dinner at the nearby Marriot’s Hanger steakhouse at 7:00 pm. Not the most exciting way to start off our trip to the French and Italian Riviera but it will have to do.

I woke up at 6:30 and got my morning latte and one of Margaret’s fantastic Paleo Morning Glory muffins (see the recipe on this blog) with coconut oil, olive oil and strawberries. Then, I put the now empty roll-aboard bags into the garage and drove to our new San Carlos project house to find the box that had my dress shoes and pick up a few more boxes of our packed stuff. I found the shoes in a box of stuff with wooden hangers, loaded some others marked “Dale’s Office “and headed back home just in time to see that Margaret was up with Spencer and was making her first double latte. Margaret made a nice breakfast for us while I continued going through the clothes that I had dumped on the guest bed upstairs, sorting it into things that I would hang up in the closet, ski clothes that I’d dump in a box for future sorting and things that would go in the Goodwill bag downstairs.

Then, sorting through the toiletry items to get down to one box under the vanity, taking a shower, a final round of taking clothes for the cruise downstairs so Margaret could make final selections for me…I’m terrible at making those decisions and she is quite good at it. If it turns out like normal, both of us could have taken half of what we took and we would have done just fine. The wild card is the weather. It could be a cold mistral wind blowing in from Provence or hot. We’ll just have to wait and see.

Once the packing was finished I cleared off the guest bed, went through the two roll-a-board camera bags to select the things I wanted to bring, charged the batteries and stored the stuff I wasn’t bringing in a safe place. Now it was time to go to the shoe store to pick up some new shoes. That went smoothly and, back home we started going through last minute preparations, making sure that everything outside was properly stored.

Next we got the bag packed for Spencer, our miniature poodle as he would be staying with our off-site dog watcher Gigi. the food we were taking on the trip was ready to go and last minute things like cancelling all the Comcast recordings was accomplished. Gigi came by to pick up Spencer as I was stepping out of the shower. She got a tour of the house and garden of our new Carmel house and Spencer jumped into her car to go to his “summer camp” with her dog Josie and her two huge cats. He seemed resigned and happy enough with his plight and he’ll come back a pound lighter due to all the walks she takes them on and fewer treats.

Of course, there were last minute things to do and Margaret realized that her white lightweight jacket wasn’t anywhere in sight. I realized that it had been in the golf cart and was in a box at the other house labeled “Golf Stuff” so we loaded up all the bags in the Mercedes and took off and stopped at the house on the way and picked up her jacket.

We ran into some traffic on the way to the airport so we ended up going directly to dinner at the Marriot. We sat next to people drinking and swearing like drunken sailors so the waiter moved us and gave us free corkage for the Law Estate Audacious wine we brought from home. Margaret’s steak was “still kicking” rare but they fixed it and we finished with a great dessert with a latte. We drove to the hotel, parked the car in the underground garage, took all our bags to the room, had a glass of wine and crashed.

Portofino - June 2-75

The last 6 weeks we have packed up our big house in Reno (a very serious and large project!), sold a car, bought a car, bought a condo in Incline, moved stuff from the Reno house into storage for the condo, packed a 26 ft Uhaul truck to the max, drove it to Carmel, unpacked the truck and, along the way binge watched about 10 episodes of Baggage (sad but true, Jerry Springer and all, but if you want a good laugh watch a couple episodes).  All that baggage inspired us to take a trip.

And, it just so happened that Regent had a fantastic deal on a 15 day cruise in the Mediterranean.  Turns out that they have a brand new ship called the Explorer coming out in 2016 and it’s inaugural voyage is very similar to one that is taking place this May.  Apparently enough long-time Regent cruisers like us decided to book that trip and that left some excess capacity this year.  So, they had a sale (about 50% off) for this year’s cruise and we jumped on it, knowing we would need to relax after all that crazy packing.  Here is the itinerary (Updated after the trip to include every day and our return).

The amazing thing is that the cruise included about 8 places that we had never been.  And, who could complain about going to Saint-Tropez, Portofino and Cannes twice in 15 days?

We start the trip on Sunday by driving from Carmel to San Francisco, staying overnight by the airport and then departing on an American/USAirways plane to Barcelona via Charlotte, SC, arriving at 8 am.  After staying over night  in Barcelona we depart on Wednesday at 6 pm for a well-deserved relaxing two weeks.

We’ll try to give you the flavor of the places we visit through words and pictures and we hope you enjoy our trip along with us.

Picturesque New England
Montreal Canada to New York

Flew through Chicago from San Jose to Montreal.  Chicago air space was still messed up due to the fire that was set in the air traffic control area.  Flights delayed in both San Jose and Chicago – got to Montreal and had to go through immigrations.  Taxi got us to the Hotel Gault around 3:30 am.  The night desk clerk felt sorry for us and gave us a free room upgrade!

Hotel Gault is located in the old city area and was very nice.  We got up, had a nice breakfast in the lobby.  Our rate included breakfast, but only continental.  Because we couldn’t eat those items (croissants, etc.) they let us have anything for free!  Great lattes!

We spoke to the concierge and got a map of the city – we took a walk down by the cruise ship terminal area and into the city.  We went into a few art galleries and researched a place for dinner.  Back at the hotel we had a nice shower and walked to dinner at the xxx restaurant.

Dinner was great, we had a martini and some oysters at the bar and then sat outside on the patio.  Just before leaving we met one of the owners.

The next day we were off to embarkation on to the Navigator.  Set sail to cruise up the St. Lawrence River to Quebec City.

Quebec City, Canada

It was a beautiful weather day and we did a tour called “Beaupre Coast, St-Anne Canyon and Winery”.  This included a wine tasting tour and a visit to Ann’s Canyon.  The wine area was very pretty with nice fall colors.  The wine was not good and we wondered why they just wouldn’t have invested all of their money into making ice wine!  The canyon was beautiful with a river running through the canyon with waterfalls and suspended bridges.

Saguenay, Canada

We were suppose to go kayaking but the winds were gusting over 50 knots so the captain cancelled the port.

Sydney, Canada

We were supposed to be on the “History Sydney Walking Tour”.  We went into the city before the tour started only to realize there wasn’t much there.  We walked down the main street, down some other streets and returned to the ship!  Sydney was named after a guy whose name wasn’t “Sydney”…Sydney Australia is also named after him.

Halifax, Canada

Dale went on the “Famous Peggy’s Cove Coastal Tour”.

St. John Bay of Fundy, Canada

Went on the “Bay of Fundy Coastal Photography” tour.  It rained off and on all day.  We stopped at different locations around the area and took pictures.  The tour guide gave some practical advice on how to take better pictures.

Bar Harbor, Maine

Went on a walking tour called the “Guilded Age Walking” tour of the city, saw all the old houses.  There were lots of cruise ships in town so we couldn’t really enjoy the down town area.  Beautiful place though and we think this is one we may want to come back to at some point!

Boston, MA

Jenny was just finishing her summer job in Gloucester so we decided to spend the day with her.  We decided to take a taxi out to Chelsea so she didn’t have to drive into the city.  Unfortunately the ship had to move the gang plank so we got stuck on the ship for approx. 30 minutes before we got off to find out there was a large cruise ship disembarking that same morning and a very long taxi line.  After much walking around we flagged down a cab and made our way to Chelsea.

We drove to Gloucester and walked around town.  Margaret got to research the artist E. Fish who, turns out to be Edward (Ned) Fish.  She met a woman in a local art gallery who also has an E. Fish painting!

We saw both restaurants were Jenny worked this summer and even got to enjoy some wine on the patio!  We took a car service back to the ship.

Newport, Rhode Island

It was a cold and rainy day so we decided to stay on the ship.  We read, packed and watched a Tom Cruise moving!

New York

Arrived in New York in the morning on a rather warm day.  Got a cab to near La Guardia airport and rented a car.  Drove to our bed and breakfast in the countryside near where our friends live.  They had a very friendly black standard poodle and we had a good time there.

Connecticut

Visited our good friends Ron and Astrid and their kids, went to Kathy’s son’s football game and visited them for dinner.  Dale became a beekeeper which was quite fun.  Next day we visited with Margaret’s brother’s family and had lunch with them.

We’ve been on a Paleo diet for 2 years now.  Basically, no gluten, no wheat (yes, no bread), no sugar (including high fructose corn syrup) and very little to no corn or corn-based products.  In the beginning we also had no dairy (yes, no cheese either), no beans (green or otherwise) or rice (made sushi a tough one).  We eat grass fed beef, pork, chicken, fish, bacon (lots of it!), eggs and wine.  We don’t eat the normal oils like canola, safflower, etc. but do use lots of olive, coconut, walnut, avocado and other healthy oils.  We use alternative flours like almond or coconut to bake.  You can use butter but only the grass fed, unsalted version.  In other words, low carb, high protein diet.  In the beginning it meant shopping at Whole Foods but now our local Safeway carries everything we need.

We love eating Paleo and will never go back to a “regular” diet again.  We got our start by reading Robb Wolf’s book Paleo Solutions.  You can buy it at Amazon at Paleo Solutions.  Last year another great book came out called Practical Paleo which not only describes what Paleo is but also has great recipes with beautiful color pictures.  Highly recommended to start with Paleo by buying this book at Practical Paleo.  If you want to lose 10-30 pounds in a couple months, buy one of these books and get going!  Both of us lost 30 pounds in about 90 days and have kept the weight off.

One of the keys for Dale is the Morning Glory muffin recipe that Margaret has refined over the last year.  Dale has one for breakfast every day before he goes to work out and loves them.  They take a bit of work to make so make a big batch and freeze the ones that don’t fit in the sealed top muffin pan like we put in the refrigerator.  Dale takes one, puts it in a bowl, adds 1 tablespoon of coconut oil, a tablespoon of organic olive oil and microwaves it for 50 seconds.  We’ve included the recipe for those muffins along with Cinnamon/Apple (or Blueberry) muffins that make a great Paleo dessert, Paleo Ketchup and Paleo BBQ sauce.

After the first year we added our morning lattes back but now use whole milk.  There’s a whole story about low fat foods but thats for another day.  Basically, with Paleo, fat is good.  That means whole milk, bacon (save the fat and cook with it) and other high animal fat foods.  You’d think it would kill you but we get our blood tested regularly and everything is better than before we switched.  We also have added rice (turns out white rice is healthier than brown), rice crackers, some cheese and love to have our thinly sliced salami from Luca’s.

Morning Glory Muffin

 

 

 

 

 

 

Paleo/Gluten Free Morning Glory Muffins (Great for breakfast)

Ingredients:

2 ½ cups Almond Flour
1 tablespoon Cinnamon
2 teaspoons baking soda
½ teaspoon salt
2 cups carrots, grated in food processor – as small as possible
2 apples, peeled, cored and grated
1 cup shredded coconut
2 cups golden raisins (or chopped dates or cranberries and/or any combination)
1 ½ cups chopped walnuts or pecans
4 eggs
1/4 cup walnut oil (Can use slightly heated coconut oil but ALL ingredients MUST be at room temperature!)
2 teaspoons vanilla extract

Directions:

  1. Preheat oven to 350 degrees
  2. Grease or use muffin paper cups for 12-muffin pan
  3. Combine almond flour, cinnamon, baking soda, and salt in a large bowl.  Mix thoroughly and then add carrot, apple, coconut, raisins and walnuts.  Combine well.
  4. In separate bowl, whisk eggs, oil and vanilla extract together.
  5. Pour the wet mixture into the dry and combine well.  The batter will be thick.
  6. Spoon into muffin pan (muffins won’t rise much so fill the cups to the top).  Place pan in center of oven for 30 minutes.  Check muffins by sticking with a toothpick.  The muffins are done when the toothpick comes out clean.
  7. Cool muffins in pan for 10 minutes and transfer to a cooling rack until cool.  Store in airtight container.  Freeze extras.

The smaller you can grate the carrots and apple the better (I use a food processor).  The batter will be a bit moister if you let the batter sit for ½ hour or so before you bake.

If you want to have a quick, longer lasting breakfast, take one muffin, put it in a bowl with 1 tablespoon coconut oil and 1 tablespoon organic virgin olive oil.  Microwave for about 50 seconds and mix up the muffin a bit to soak up the liquid.  You can also add 1 tablespoon of grass fed butter (important to be grass fed!) to your morning coffee/latte.  With those two you’ll be good for a couple hours.

Paleo Cinnamon Apple (or Blueberry) Muffins (Paleo & Gluten Free)

Ingredients:

2 cups blanched almond flour (Whole Foods has this in bulk or use Bob’s Red Mill at Safeway, etc.)
½ teaspoon sea salt
½ teaspoon baking soda
¼ cup arrowroot powder (Bob’s Red Mill)
1 teaspoon ground cinnamon
¼ cup grapeseed oil (or light olive oil)
¼ cup agave nectar (If you like your muffins sweeter you can do ½ cup agave nectar
and eliminate the ¼ cup water.  We like to use the ¼ agave with the water.)
¼ cup water
1 large egg
1 tablespoon vanilla extract
2 medium apples, peeled, cored and diced into ¼ inch cubes OR 1 pint frozen blueberries

Directions:

Preheat the oven to 350 degrees F.  Line 10 muffin cups with paper liners.  In a large bowl, combine the almond flour, salt, baking soda, arrowroot powder, and cinnamon.  In a medium bowl, whisk together the grapeseed oil, agave nectar, water, egg and vanilla extract.  Stir the wet ingredients into the almond flour mixture until thoroughly combined, then fold in the apples (or blueberries).  Spoon the batter into the prepared muffin cups.

Bake for 30-35 minutes until the muffin tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.  Let the muffins cool in the pan for 30 minutes, then serve.  Refrigerate leftovers.

Try both types…they are both very yummy and very healthy.

 

Paleo & Gluten Free Ketchup

Ingredients:

  • 1 can (6 ounces) tomato paste
  • 2 tbsp apple vinegar
  • 1/4 tsp dry mustard
  • 1/3 cup water
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1 pinch ground cloves
  • 1 pinch ground allspice;

Preparation:

  1. Put all ingredients in pot and simmer on stovetop for 20 minutes.

 

Paleo & Gluten Free BBQ Sauce

Ingredients:

  • 1 onion, minced
  • 1 clove garlic, minced
  • 1 can (6 oz) tomato paste
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1/4 cup homemade ketchup
  • 3 tbsp mustard (check ingredients to make sure no sugar or other “unwanted” ingredients)
  • 1 tbsp Worcestershire sauce (check ingredients, low sodium version looks much better)
  • 1 pinch ground cloves
  • 1 pinch cinnamon
  • Smoked paprika to taste
  • Hot sauce to taste, optional (check the ingredients and chose a high-quality sauce)

Preparation:

  1. In a large frying pan, with a bit of cooking fat, brown the onion for about 4 minutes.
  2. Add the garlic and cook for another minute.
  3. Add all the other ingredients and simmer for 30 minutes.
  4. Taste the sauce and adjust with more smoked paprika, vinegar or hot sauce to the desired taste.
  5. Cool and store in the refrigerator

 

Paleo BBQ Baby Back Ribs

Ingredients:

4lbs Pork “Baby” Back Ribs

All ingredients for the rub (see below):

Dry Rub

  • 1 tablespoon Salt,
  • 1 tablespoon Black Pepper
  • 2 tablespoons Granulated Garlic
  • 2 tablespoons Onion Powder
  • 1 tablespoon Cayenne Pepper
  • 1 tablespoon Chili Powder
  • 1 tablespoon Paprika
  • 1/2 teaspoon Cumin,
  • 1/2 teaspoon Mustard powder
  • 1/2 teaspoon Ground Clove

Ingredients:

Preheat oven to 275 degrees.

Prep your ribs. It’s best to have your ribs out at room temp for 30 minutes prior to cooking.

Take off the fat membrane from the backside of the rib racks. Run a knife along the edge and work your finger to get under the fat, and pull it off the ribs, usually it comes off in one piece.

Combine and mix all spice rub ingredients in a bowl and liberally apply to the ribs on both sides. Work it in, massage the meat with the rub!

In a large enough baking pan or large cookie sheet, place a wire rack on the baking pan or cookie sheet and lay your ribs on the rack. You want them off the bottom of the pan. Add 1 cup of water to the pan or cookie sheet.  You can cover the pan with aluminum foil for easier clean up – ribs will drip lots of grease!

Bake for 2 hours at 275 degrees and then turn the pan around, and bake another hour at 275 degrees.

At 3 hour mark remove ribs from oven, increase oven temp to 375 and coat one side with BBQ sauce.  Put the ribs back in the oven at 375 degrees for 15 minutes.  Take out and turn ribs over to cover the other side with BBQ sauce and return to 375 oven for 15 more minutes.  Let rest 10 minutes before serving and enjoy!

    I am in Kadrias Barre and Cycling class with you at In Shape and learned about your site this week. I am very interested in the Paleo diet program and wanted to ask you about getting started. I have read a couple of books but struggle a little with sorting out where to start. So if I can pick your brain a little I would really appreciate it.       Dale - Sorry it took so long to get back to you. I just updated the post on Paleo to include the two books that got us started. I’d suggest the Practical Paleo book unless you want a lot of technical information on why it works. The links to the books are in the updated content.
